It’s very easy to smoke-rotiss a chicken (provided your grill has a rotisserie kit.)
Buy some smoke chips and 2 smoker boxes. (Good combinations for chicken:)
- Apple and Pecan
- Cherry and Pecan
- Cherry and Apple
- Apple and Hickory
Soak the chips according to the instructions and fill 2 smoker boxes. Place one smoker box on an area of your grill with a burner.
Set up the rotisserie according to your manufacturer’s instructions.
Underneath where your rotisserie chickens will turn, put a disposable (you will use it again, but the disposable ones are big and cheap) “lasagne pan” on the grill area.
Cover the bottom of the “lasagne pan” with:
- Strips of lemon zest
- Peeled whole garlic cloves
- Whole or halved shallots
- 1 White onion, cut into “rings”
Cover this with white wine and add 1/4 cup of lemon juice. Have some extra wine handy in case this cooks down too much. (put it in a plastic cup or container so you don’t break that shit on your patio.)
Put the chicken(s) on the rotisserie.
Halfway through cooking, take one of the smoker boxes off and replace with the reserved smoker box.
When the chicken is done, bring the pan with all the good shit in and strain its contents into a saucier or saucepan. Check the liquid for seasoning and acid. Season if necessary/add wine/lemon juice to taste.
Bring to the boil and thicken with your choice of flour slurry or cornstarch slurry (I always use corn starch.)
You got yourself some smoked gravy and some good ass juicy chicken.
